Marinated Tomatoes: Robinette Family Recipe

I'm sharing a super easy family recipe for marinated tomatoes!


In the peak of tomato season it can be hard to come up with ideas of what to do with all those tomatoes. Enter the marinated tomato.


This recipe is about as easy as it gets, they store in the refrigerator and you can keep adding to the marinade for a week as you eat through the tomatoes.

 

Slice your tomatoes thick -1/2" or so - or use smaller whole tomatoes with the tops cut off.


Arrange tomatoes in an 8 or 9 inch square pan.


Spoon the marinade over the top, cover, and refrigerate for 2-3 hours before serving.


Marinade:

  • 2 cloves garlic minced, or garlic salt

  • 1/4 cup minced onion

  • chopped parsley to taste

  • 1 tsp salt

  • 1/2 tsp pepper

  • 2 tsp oregano

  • 1/2 tsp dry mustard

  • 1/3 cup wine vinegar

  • 1 cup olive oil
