Cucumbers are a staple vegetable of the summer.
Crisp, cold, and full of water, cucumbers are the perfect summer snack.
They can also be the perfect side dish with a little dressing up!
This cucumber salad recipe is so simple and delicious, you'll quickly memorize it and make it several times each week.
It is delicious on its own but also as a compliment to other summertime dinner favorites like BBQ, potato salad, and baked beans.
Refreshing Cucumber Salad
2 pounds cucumbers, thinly sliced (we like to use our mandolin!)
1 small red onion, thinly sliced
5 tablespoons apple cider vinegar
1 tablespoon granulated sugar
2-4 teaspoons kosher salt (start with 2 and see how salty you like it!)
1/2 teaspoon ground black pepper
2 tablespoons fresh dill or chives, chopped
don't hesitate to add other summer veggies in with this mix if you want to: think thinly sliced bell pepper or halved cherry tomatoes
Combine all ingredients except the fresh herbs in a medium bowl and toss gently to combine.
Let stand for 30 minutes, or refrigerate overnight.
Stir in dill or chives just before serving.
