10 Ideas for Using the Last Tomatoes of the Summer

This October it feels like late August and early September with temperatures in the 70s and 80s the last couple of weeks!


The lack of hard frosts means we still have lots of tomatoes and it’s time to get your last hurrah in before they are gone from our seasonal diets until next June/early July.



Here are 10 great ideas for using the last of the summer tomatoes!

  1. Make homemade bruschetta or panzanella - both are amazingly delicious!

  2. Make soup, raw or cooked! Think gazpacho or plain old tomato soup. You can even freeze this for a taste of summer in mid-February when you could really use it!

  3. Make your own dried tomatoes. Oven-dried tomatoes are an easy way to sweeten, flavor, and preserve those delicious summer flavors!

  4. Make fried green tomatoes OR green salsa using green tomatoes instead of tomatillos! Red tomatoes can’t have all the fun and honestly, green salsa is my go to favorite always.

  5. Freeze your tomatoes. Tomatoes can be frozen with their skins on or off, raw or cooked, whole, chopped, sliced or puréed! We like quart size ziplock bags the best as it seems to be the right amount of tomatoes to pull out of the freezer at a time for soup, sauce, or whatever you imagine up for them!

  6. Make fresh salsa (pico de gallo). It doesn’t take long and the freshness of the tomatoes can shine through.

  7. Marinate tomatoes! This is my family recipe for easy marinated tomatoes.

  8. Make stuffed tomatoes. Everyone has a favorite stuffed pepper recipe - give it a go with tomatoes.

  9. Make your own homemade spaghetti or pizza sauce. Make it chunky or smooth roasted or boiled, there are so many ways to create your own family favorite tomato sauce. Make a double or triple batch and freeze what you don’t use right away and you’ll thank yourself later. Store bought sauce can’t compare to your own creation from fresh local tomatoes.
