Quick and Easy Potato Soup

It's winter and when you're eating local and eating healthy, potatoes become a staple in your life! Thankfully there are endless recipes to get creative with potatoes.


But let's face it...the kids are hungry. You need to get dinner on the table in less than 30 minutes. You're not feeling creative or inspired.


Don't call for carryout! This potato soup recipe will save your evening.


It's simple, it's easy, it's quick AND my kids ask for it!


In 30 minutes you'll be eating creamy, sweet soup, warming your bellies with healthy food.


We are a family of 5 and these general ingredients and quantities work for us but this is easy to scale up or down, add more or less of one ingredient or another and it all works out.


Ingredients:

2 tablespoons olive oil or butter

1 medium to large onion, diced

2-3 cloves garlic, minced

5-8 large potatoes (any color, any type), diced

3-6 large carrots (any color), diced

4-6 cups vegetable/chicken stock

1 bay leaf

salt and pepper to taste


Optional additions/ideas (these can all be added right before you eat so each family member can customize their soup) :

  • pan fry rounds of Italian sausages to add to the soup right before you eat

  • garnish with micro greens or fresh herbs (arugula micro greens are amazing!)

  • make quick homemade croutons with leftover/stale bread and sprinkle those on top for a crunch

  • add grated parmesan, fresh feta, or sour cream for a richer more complex flavor

  • drizzle extra olive oil on top


Directions:

Get a large soup pot, add the olive oil or butter, and heat to low to medium heat. Add the diced onion and garlic and let cook for about 5 minutes or until the onion is beginning to be translucent.


Add the diced potatoes, carrots, and stock, and add additional water if necessary to make sure all the vegetables are covered. Add bay leaf and bring to a healthy simmer until potatoes and carrots are soft (15-20 min).


Remove the bay leaf. Use an immersion blender or batch blend in a food processor or blender to make a creamy soup. You can leave some chunks in there - it's up to you! Season with salt and pepper.


Pair it with some warm fresh bread from Le Quartier (or if I plan ahead I will make this incredibly easy homemade bread) and a salad and you've got a quick, easy, healthy meal that the whole family will love.
